Instant Pot Chick-fil-A Chicken Tortilla Soup

This Copycat Chick-fil-A Chicken Tortilla Soup is made with shredded chicken breast, beans, corn and a blend of spices to make a hearty soup that’ll warm the soul. It’s also made entirely in your Instant Pot.

Chick-fil-A Chicken Tortilla Soup Recipe

Soup is my go-to when it’s cold outside or when I am feeling sick. There is just something about a warm bowl of soup that can make your day.

And since I love Chick-fil-A, I figured it would make sense to make a copycat recipe for their chicken tortilla soup. After all, it is DELICIOUS!

What You Need to Make This Recipe:

  • Boneless skinless chicken breast (you can also use a rotisserie chicken or canned chicken)
  • Water (if cooking chicken)
  • Chicken stock
  • Cannellini beans
  • Black beans
  • Rotel
  • Creamed corn
  • Whole kernel corn
  • White onion; diced
  • Olive oil
  • Cumin
  • Garlic
  • Salt
  • Black pepper
  • Seasoned tortilla strips for topping

Things to Note:

  • The amount of cooking time depends on what kind of chicken you are using. If you are using fresh chicken breasts, you can follow my Instant Pot Shredded Chicken Recipe here.
  • If you are using large or frozen chicken breasts, cooking time may take up to 30 minutes.
  • If you are using canned chicken or rotisserie chicken, you will add the chicken along with all of the ingredients into the Instant Pot at the same time and it will all take about 10 minutes to get nice and hot.
  • For this recipe, I used fresh boneless skinless chicken so I will tell you how to make the exact recipe I did.

How to Make Chick-fil-A Chicken Tortilla Soup at Home:

In the instant pot, add in chicken breasts and two cups water.

Place lid on instant pot and turn the valve to the sealed position.

Click “Pressure Cook” on high for 9 minutes.

Once complete, use the “Quick Release” method and remove the chicken from the Instant Pot. Drain the water and shred the chicken. It will be so tender, you can shred it with two forks in hand.

In the instant pot insert add olive oil and onions. Set pot to saute on normal heat and cook for 3 minutes.

Turn off saute mode. Add in shredded chicken. Drain black beans and whole kernel corn. Pour in black beans, corn, one can of cannellini beans, and rotel. Give it a stir.

Add in creamed corn and whole kernel corn. Stir.

Add in chicken broth, garlic, cumin, salt, and pepper. Stir well.

Turn on saute mode.

In a blender, blend the second can of cannellini beans. Pour this into the instant pot.

Once it comes to a boil turn instant off and then turn on keep warm.

The soup is now ready to serve.

Top with seasoned tortilla strips.

Ingredients
  

  • 2 boneless skinless chicken breast or rotisserie chicken
  • 2 cups water if cooking chicken
  • 1 – 32 oz. chicken stock
  • 2 – 15 oz. cans cannellini beans
  • 1 – 15 oz. can black beans
  • 1 – 10 oz. can rotel
  • 1 – 15 oz. can creamed corn
  • 1 – 15 oz. can whole kernel corn
  • 1 white onion; diced
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 tablespoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Seasoned tortilla strips for topping

Instructions
 

  • In the instant pot, add in chicken breasts and two cups water.
