Healthy Chocolate Pumpkin Muffins

These Healthy Chocolate Pumpkin Muffins are grain-free and combine delicious dark chocolate, fresh pumpkin puree, and a few simple ingredients to make the perfect fall dessert.

Since I am on the Weight Watchers diet, I’ve had to find recipes that can satisfy my sweet tooth but also help budget my points so I don’t go overboard.

That is why I love this recipe! Each muffin is only 6 Weight Watchers points (I actually made this recipe in the app called “chocolate pumpkin muffins”).

Yes, I know 6 points might seem like a lot but if you plan to make these, just eat zero point foods the rest of the day and use your points on these. Trust me, you won’t regret it.

Besides a lot of other desserts are much higher in point value and these will satisfy and sweet craving!

Ingredients:

How to make these Chocolate Pumpkin Muffins:

Preheat oven to 350 degrees F. Add baking cups to muffin tin and spray with a light coat of cooking spray. Set aside.

Add all ingredients (except chocolate chips) to a blender. Blend the ingredients on high until smooth.

Add chocolate chips to the mixture and gently stir to incorporate. I like to fold them in with a flat spatula.

Fill each baking cup about 3/4 of the way full with the mixture. Sprinkle the tops with a few chocolate chips.

Bake in preheated oven for 21-24 minutes or until toothpick inserted in center comes out clean.

Allow muffins to cool in muffin tin for 5 minutes before serving.

Serve and enjoy!

  • 1 avocado
  • 2 eggs
  • ¼ cup honey
  • 2 tablespoons butter melted (or coconut oil, melted)
  • 3 tablespoons coconut flour
  • cup cocoa powder
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon salt
  • ¼ cup Enjoy Life dark chocolate chips + extra for sprinkling on top
