  • Shredded Cheddar Cheese – You can also use a Colby jack or Mexican style cheese
  • Green Onions – Fresh are best
  • Onion Powder

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 3 cans Mexicorn, or southwest style corn 11 oz.
  • 2 jalapeno diced
  • ½ cup green onions sliced
  • 1 ½ tsp. garlic powder
  • 16 ounces shredded cheddar cheese


  • In a large mixing bowl, combine corn, cheese, Jalapenos, and cheddar cheese.
  • Add the mayonnaise, sour cream, and garlic powder.
  • Fold all of the ingredients together until well combined.
  • Chill in the refrigerator for 1 hour, or until ready to serve.
