Easy Crepes Recipe

This Easy Crepes Recipe is one of my go-to breakfast recipes. It combines flour, vanilla, egg and few other simple ingredients in a blender to make the perfect classic crepe. You can then fill it with all sorts of fix-ins including red, white and blue fruits to make it a patriotic crepe too!

In my personal opinion, this is the BEST sweet crepes recipe. It’s a recipe my husband has perfected over the years. It has the perfect amount of vanilla and sweetness to satisfy any sweet tooth during breakfast. This recipe also makes the perfect crepe to stuff because it doesn’t rip or tear easily!

What is the right ratio of liquid and eggs in a crepe recipe?

If you want your crepes to be firm and not tear easily, we’ve found the more egg the better. You basically want a 2/3 ratio of egg to other liquids in the recipe. The eggs help keep the crepes in tact.

If you have an allergy to milk or unable to consume it, you can substitute the milk with Soy milk, almond milk, or rice milk instead.

Is there a crepe recipe without a mixer?

You can totally make any crepe recipe without a mixer or blender. You can just hand mix it. I will say, hand-mixing tends to make the batter a bit more clumpy so keep that in mind when making it this way.

Easy Crepes Recipe

Ingredients needed to make a basic french crepe:

  • Eggs
  • Flour
  • Milk
  • Salt
  • Sugar
  • Vanilla
  • Butter
  • Fresh fruit
  • Syrup, Chocolate Syrup, Powdered Sugar, Whipped Creme, etc. for topping

How to make an easy, basic french crepe:

Combine the eggs, milk, salt, sugar, vanilla and butter into a blender. Blend on low and slowly add in flour. Keep blending until everything is mixed and there are no visible clumps.

Next, heat a pan on medium heat. Use cooking spray or butter to grease the pan so that batter does not stick. 

Once heated, pour about 1/4 cup batter into the pan. Immediately lift pan and tilt in a circular motion spreading out the batter so that it is a thin layer.

Set back onto stove and cook for 2-3 minutes then flip crepes over and cook another 2-3 minutes.

Keep an eye on it so that it doesn’t over cook and end up crispy. They need to be soft and spongy so that they can be folded or rolled.

Remove from pan and place onto a plate. Roll or fold crepe. You can fill them with different crepe fillings and top with fresh fruit, syrup, chocolate syrup, or powdered sugar.
