Funfetti Cake Mix Cookies
If there is one thing to know about me, it’s that I love color (especially mint) but I do love all colors. The more color, the better.
That is what I love about baking, you can have so much fun with color and details to take any recipe to the next level.
I loved making our Fruity Pebbles Hot Cocoa bombs because they had a rainbow of colors which led me to making these rainbow cookies.
So, if you love color and a tasty, sugary treat, this is for you! The best part is, they require just 5 ingredients!
Cake Mix Cookie Tips
- Any 15 or 16 ounce cake mix variety should work. The recipe was tested with Betty Crocker.
- It is extremely important that you chill these cookies for at least 45 minutes and not longer than 1 hour. The dough will be too soft to shape and roll without chilling. Prior to the 1 hour mark these cookies really puff up and have more of a soft and chewy texture, after 1 hour they can become hard and crunchy.
- Store in an airtight container for up to 1 week or freeze for up to 3 months.
What You Need to Make Funfetti Cake Mix Cookies
- Rainbow Chip Cake Mix or Funfetti cake mix
- Vegetable oil
- Large eggs
- Vanilla extract – Pure vanilla extract is best but imitation works too.
- Rainbow Nonpareils Sprinkles, for coating
- Cookie Sheet
- Parchment Paper
How to Make Funfetti Cake Mix Cookies
Add the cake mix, vegetable oil, eggs, and vanilla to a large bowl or stand mixer fitted with a paddle attachment and beat until combined. The dough will be fairly sticky
Chill the dough for 45 to 60 minutes. Set a time to ensure you don’t chill the dough longer than an hour.
Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Use a medium cookie scoop to portion out the dough and drop it in the bowl of nonpareils, then roll the ball in the nonpareils to coat and place on the prepared baking sheet at least 2 inches apart.
Bake for 8 to 9 minutes. Do not over bake these cookies, they will look puffy and slightly underdone, but they will finish cooking on the baking sheet after coming out of the oven.
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Once cooled, enjoy with a glass of milk or wrap up for gift giving!
Store any leftovers in an airtight container.
