Grinch Cake Mix Cookies
Years ago I made Grinch Cookies and they’ve been a huge hit ever since.
But then I decided, what if I could make a Grinch Cookie that was even easier to make? So, I did just that.
This Grinch Cookie Recipe requires just 5 ingredients that you might already have on hand.
These are cake mix cookies so you get a crunchy on the outside, chewy on the inside texture. It’s the perfect cookie to make for the holidays, to give as gifts and will be enjoyed by everyone!
What You Need to Make Grinch Cake Mix Cookies
Ingredients:
- 1 Box White Cake Mix
- ½ Cup Vegetable Oil
- 2 Eggs
- ¼ Teaspoon Neon Green Gel Food Dye
- Large Red Heart Sprinkles
Items Needed:
- Parchment Paper
- 1.6-Inch Cookie Scoop
- Large Mixing Bowl
- Rubber Spatula
- Baking Sheet
How to Make Grinch Cake Mix Cookies
Combine the cake mix, oil, eggs, and dye in a large bowl and mix until well combined and no color streaks appear.
Refrigerate for 15-20 minutes.
Preheat the oven to 350 degrees and line an average sized baking sheet with parchment paper.
Using the cookie scoop, place scoops on the prepared baking sheet with about an inch in between each cookie.
Using your hands with gloves or the rubber spatula, slightly flatten to cookies and smooth up the edges so they look like half dollar discs.
Place one heart sprinkle in the middle of each cookie and lightly press it into the cookie.
Baking for 8-10 minutes or until just lightly golden brown on the bottom. Be careful not to burn.
Remove from the oven and let sit for about 10 minutes to cool.
Serve and Enjoy!
Helpful Tips:
- I found it much easier to shape the cookies by putting on rubber gloves and doing it with my hands. It only took maybe a minute.
- Be careful to not overcook these cookies. They will burn or dry out quickly.
- It’s important that the cookies sit after coming out of the oven without being handled or they’ll fall apart. They firm up a bit once cooled a bit and they might seem undone when you first pull them out. I assure you, they’re finished.
- You may be able to skip the refrigeration step if the dough isn’t overly sticky. It’s easier to work with when it’s firmed up a bit and it only takes a few minutes of chill time to accomplish that.
