Grinch Cake

This Grinch Cake is the most festive dessert you’ll serve up for the holidays. It is an easy-to-make poke cake topped with Grinch green frosting and a Green Chocolate Grinch face. It’ll have your heart growing three sizes with every bite.

When it comes to holiday baking, the sweeter, the better.

Now if you know me at all, you know I like baked sweets and I absolutely love The Grinch.

Put those two together and you have some of the cutest Grinch Recipes around!

Well, get ready to add this Grinch Cake to your baking list because it’s cute, easy and totally delicious.

Oh and did I mention that it’s actually a Grinch Poke Cake? Yes, it has a red raspberry swirl inside. YUM!

Grinch Cake Ingredients

For The Cake:

  • 1 Box of White Cake mix
  • 3 Eggs
  • 1/2 cup of Oil
  • 1 Cup of Milk
  • 1 Package of Raspberry Jello
  • Water
  • 1 (8-ounce) tub of Cool Whip – softened or thawed
  • Neon Green Food Coloring Gel

For The Frosting:

Frequently Asked Questions

Can I use regular food coloring?
While you can use regular food coloring, I suggest using the gel food coloring. Gel food coloring keeps the dip from becoming too watery since it’s oil-based. Plus, the gel food coloring gives a more vibrant green color.

Do I have to make this a poke cake?
Not at all. If you’d rather just have a green cake, you can skip the extra steps to make this a poke cake.

Does almond bark have almonds in it?
No. Although it is called almond bark, the melting chocolate does not actually contain almonds.

How to Make A Grinch Cake

First start by making the chocolate Grinch Face. Melt the White Chocolate Almond Bark in the microwave, until completely melted smooth (30-second intervals).  Be careful not to burn!

Measuring 1 cup when melted.  Add the Green Food Coloring until you have a bright green color. 

Spoon into the Grinch Face Mold completely filling the mold, and smoothing over the top.  Place in the refrigerator to set.

Make the Cake mix according to the package directions, substituting MILK instead of Water. Add several drops of the Green food coloring Gel to the cake mix until you have a bright green color. 

Pour the Cake batter into a 9 X 11-inch Ceramic dish, and Bake at 350 degrees, for about 25 minutes, or until a toothpick inserted in the center comes out clean. 

Remove from the oven and place on a wire rack.

When the cake is cooled to the touch, place in the refrigerator to cool. 

While the cake cools, make the Jello.

In a heavy sauce pan, add 1/2 cup of water, and bring to a boil.  Add 3 ounces of Raspberry Jello to the water, and remove from heat.  Stir until all the Jello is completely dissolved, then add 1/2 cup of cold water, and stir well to blend. 

Add the thawed Cool Whip, and stir to blend, but leave some of the cool whip – white streaks – visible.  Remove the Cake from the refrigerator, and with a wooden spoon, poke holes all over the cake.

Spoon the Jello/Cool Whip mixture over the cake into the holes, and then place the cake back in the refrigerator for 4 hours, to completely cool. 

In the mixing bowl of a stand mixer, place the softened Butter, and the softened Cream Cheese, and mix with the Whisk attachment until smooth and creamy. 

Add the Powdered Sugar 1 cup at a time, blending between additions until all the powdered sugar is added, and mixed smooth and creamy.  Add several drops of the Neon Green Food Coloring Gel, until you get a bright green color. 

Remove the Cake from the refrigerator and Frost the Cake with the Frosting.

Place the cake back in the refrigerator.

Before serving, remove the Grinch Face Mold from the refrigerator, and place the Grinch Face in the center of the Cake.

Sprinkle the Red Hearts all over the top of the cake.  Cut in 2×3 inch pieces for serving.

  • Neon Green Food Coloring Gel

For The Grinch Face Topper:

  • Grinch Face Mold
  • 1 cup of White Chocolate Almond Bark – melted
  • Neon Green Food Coloring Gel
  • Red Grinch Heart Sprinkles

Instructions

This recipe makes about 10-12 servings depending on the size of cake you slice.
