- Dried Black-Eyed Peas: You can either use dried black eyed peas in the bag or canned black eyed peas depending on preference.

- Minced Garlic: I prefer the taste of freshly minced but pre-minced garlic in a jar works well too.

- 1 pound dried black-eyed peas sorted and rinsed
- 6 cups chicken broth
- 2 cups cooked cubed ham
- 8 ounces bacon chopped
- 1 medium yellow onion diced
- 2 tablespoons salted butter
- 2 teaspoons minced garlic
- 1 teaspoon pepper
- ½ teaspoon salt
- minced fresh parsley optional garnish
Instructions
- Turn the Instant Pot to the sauté setting. Melt the butter, then add the chopped bacon, minced garlic, and diced onion. Cook until the bacon is golden and aromatic, about 10 minutes.
- Stir in the black-eyed peas, ham, salt, pepper, and chicken broth.
- Switch the Instant Pot to the pressure cook setting and set it to cook for 15 minutes. Note: It may take a few minutes for the pot to reach pressure before the timer begins.
- Allow the pressure to naturally release for 20 minutes, then carefully perform a manual release.
- Sprinkle with freshly minced parsley for garnish, if desired, and serve warm. Enjoy!
