Did you know that you could cook pumpkins in the Instant Pot? Until recently, I didn’t.

In fact, I didn’t even know that mini pumpkins were edible. All of these years I just thought they were for decoration or to be painted by kids.

So, imagine my surprise when I realized you could cook mini pumpkins in the Instant Pot and that they were delicious!

These mini pumpkins might just be your new favorite dessert. They only require a few ingredients and can be made in 20 minutes or less!

Are Mini Pumpkins Edible?

Yes! Mini pumpkins are totally edible just like regular sized pumpkins. While they may not taste great on their own, they taste fabulous with the right amount of spices and toppings.

You can also use mini pumpkins in soups, pies, baked desserts and even use it as a bowl for serving.

Where Can I Find Mini Pumpkins?

Mini pumpkins are sold in grocery stores across the country. I’ve typically found mini pumpkins in the produce section of my local grocery stores. Walmart, Kroger, and Target are a few places that sell them. Keep in mind that store selection varies and these are a seasonal item.

How Much Do Mini Pumpkins Cost?

Mini pumpkins typically cost right around $1.00 each. However, you can often find them in bags for around $3-$5 per bag.

How to Cook A Mini Pumpkin In Your Instant Pot

Cut the tops off each pumpkin and set aside. Place the trivet inside your Instant Pot.

Add one cup of water into the bottom of your instant pot and place the pumpkins on the trivet in one layer. Place the lid on and in the sealing position.

Set on high pressure for 7 minutes and allow to naturally release for 5 minutes. After 5 minutes manually release any remaining pressure.

Carefully remove the pumpkins and place on a baking sheet.

Remove the seeds from the inside of each pumpkin using a spoon.

Sprinkle each pumpkin with about ½ teaspoon of cinnamon and top with ¼ cup mini marshmallows. If you want it more savory and sweet, you can also add a bit of butter on top too.

Set your oven on broil and place the pumpkins in the middle rack for about 2 minutes watching carefully.

Remove when the marshmallows are golden.

  • 3 mini pumpkins
  • 1 ½ teaspoons cinnamon
  • ¾-1 cup mini marshmallows optional

Instructions

You do not have to add the marshmallows, but they do take this dish over the top! I really love the little touch of added sweetness.
The taste and texture are very similar to a baked sweet potato.
