Instant Pot Shredded Chicken Breasts (Zero Weight Watchers Points)

There are two things I am loving about food right now. First, the use of my Instant Pot and second the Weight Watchers program. Both have been such a blessing in my life to become healthier. And recently, I made Instant Pot Shredded Chicken Breasts and the best part, this is a Zero Weight Watchers Points Recipe!

Now, I want to point out something about this recipe: COOKING TIMES MAY VARY.
The reason I want to let you know this up front is because Instant Pot’s may vary in the amount of time needed to fully cook chicken. Chicken is NOT something you ever want to undercook. It took 9 mins (for fresh chicken breasts) to cook entirely but you may need to adjust your cooking time as needed. The chicken should reach a temperature of 165F to be fully cooked and heated through.

Instant Pot Shredded Chicken Breasts (Zero Weight Watchers Points)
Ingredients Needed:
- 5 Chicken Boneless Skinless Chicken Breasts
- 1 Cup Chicken Stock (can also use water but I prefer additional flavor)
- 1 Teaspoon Paprika (you can also use other seasonings depending on what you recipe you plan to use the shredded chicken in)
- 1 Teaspoon Chili Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
How to Make It:
First, start by preparing your chicken. I cut off all the fatty pieces and cut out anything that didn’t look good.
Next, place your chicken breasts into the bottom of your Instant Pot.
Add your seasonings. Make sure you are covering the chicken breasts entirely.
Now pour your chicken stock into the bottom of the pan.
Close the lid of your Instant Pot and click “Pressure Cook” on high for 9 minutes.
Once complete, use the “Quick Release” method and remove the chicken from the Instant Pot.
It will be so tender, you can shred it with two forks in hand.
You can eat it as-is or store it away for future use. Store in an airtight container for a few days in the fridge.

can i use a bone in turkey breast, i am thinking i could just pull the turkey apart and lay it in the pot and follow the from the rest of the directions.

Hi Dana! Since this recipe is specifically for boneless chicken breasts (including the cooking times) I would not be able to safely say you could use the same directions for a bone-in turkey breast. I would search online for recipes that specifically give directions for that. Thank you!
