What You Need to Make Jalapeno Popper Mummies
- Jalapenos – Sliced in half vertically and seeds removed
- Cream Cheese– I prefer freshly squeezed but you can use pre-made bottled
- Shredded Cheddar Jack Cheese – Washed and sliced
- Cooked Bacon – Sliced into small pieces
- Green Onion– Sliced
- Canned Crescent Rolls
- Egg – To make an egg wash for baking
- Candy Eyeballs – optional
Helpful Tips
- If you don’t like the spice of jalapeno’s, try using the mini sweet peppers (snacking peppers).
- The candy eyeballs are optional but are a fun finishing touch.
- Allow the cream cheese to sit out for 2 hours before using as it makes it easier to blend when it is softened.
- You can use any kind of shredded cheese you’d like.
- I highly recommend serving these up with a dollop of red pepper jelly or mint jelly on top. So good!
Jalapeno Popper Mummies
Ingredients
- 10 jalapenos
- 6 ounces cream cheese
- 1 cup shredded cheddar jack cheese
- 4-5 slices cooked and crumbled bacon
- 3 Tbsp green onions
- 8 ounce can of crescent rolls
- 1 egg
- Candy eyes optional
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment, or foil with a light spritz of non-stick spray.
- Slice the jalapenos in half, length wise, and remove the seeds and ribs.
- In a medium mixing bowl, use a fork to smash the cream cheese to soften.
- Fold in the shredded cheese, bacon, and green onion.
- divide this mixture evenly between the jalapenos, careful not to over-fill.
- Take the crescent roll sheets, and stretch out onto a cutting board. Press the seams of two triangles together to form a rectangle. You should end up with 4.
- Cut each rectangle into 5 strips.
- Wrap the strips around the jalapenos, and place onto the prepared baking sheet.
- Bake for 13-15 minutes, until the crescent strips are golden brown.
- Remove from the oven and allow to cool slightly before enjoying.
- For a fun look, add candy eyeballs to the mummies for decoration.
