Loaded Breakfast Pita Pockets

This time of year I feel like I am slacking just a bit. With the craziness of the holidays, a business to run and a family to care for, you would be correct if you said my life was very chaotic. Sometimes I forget to eat until close to 2 in the afternoon because of how busy I am. But I’ve made a choice to no longer be that mom that doesn’t take care of herself too so I am doing something about it. What You Will Need to Make Loaded Breakfast Pita Pockets:

  • the happy egg co. eggs (found at Walmart)
  • Whole Wheat Pita Pockets
  • Chunky Salsa
  • Cooked Bacon, Chopped
  • Baby Spinach
  • 1/2 Cup Shredded Cheddar Cheese
  • 1/2 Yellow Onion, Chopped
  • 1/2 Green Bell Pepper, Chopped
  • 1 Roma Tomato, Chopped
  • Salt and Pepper to taste

How to Make Loaded Breakfast Pita Pockets:

First, start by cutting up all of your fresh vegetables. I wanted to chop mine finely but you can make the pieces as big or as little as you want. I did not cut up the baby spinach.

Cook your bacon throughly. Once cooked, remove from the grill or pan and place onto a paper towel covered plate to remove excess grease. Set aside.

Crack open your eggs and place them into a mixing bowl. I used a fork to gently whip them to make scrambled eggs.  

Now mix in your chopped vegetables and place onto grill or into your skillet. Cook until the eggs are throughly cooked and nice and fluffy.

Add in some shredded cheese to the eggs and allow the cheese to be melted. You can also add your bacon which you will want to chop into pieces.

Once cooked, remove from heat and stuff your pita pockets with the scrambled egg mixture. Stuff in baby spinach and serve with a side of chunky salsa.
