Low-Carb Cilantro Lime Chicken Recipe

This Easy Cilantro Lime Chicken Recipe can be made in just a few minutes using boneless skinless chicken breasts, cilantro, lime and a homemade avocado, onion and tomato topping. It is the perfect low-carb recipe to get your body ready for Summer!
This recipe is something we make for our family time and time again.
It’s lean, full of flavor and it fairly easy to make. It also pairs great with anything. Salads, steamed vegetables and even rice and potatoes.
I guess you could call this recipe Mexican-inspired food. Why? Because it’s almost like you are topping the chicken with Pico De Gallo (with some added avocado). In fact, the topping is pretty similar to my Homemade Pico de Gallo recipe.

Ceviche is a dish that is similar to a salsa but is made with fresh raw fish cured in citrus juices (lemon or lime), onions, cilantro, peppers, tomatoes and some spices (chili powder, salt, pepper, etc.)

What You Need to Make Low-Carb Cilantro Lime Chicken:
- 6 Boneless Skinless Chicken Breasts
- 2 Large Avocados, Diced
- 2 Roma tomatoes, Diced
- 1 Small Onion, Diced
- 2 Bunches Cilantro, Chopped
- 1 Large Lime – (roll the lime on the counter until soft, better if left at room temperature)
- 1 Teaspoon Garlic, Minced
- Salt & Pepper to taste
- 1 Ziploc Bag
To Make Low-Carb Cilantro Lime Chicken:
Start by trimming any fat off of your boneless, skinless chicken breasts.
Next, place the chicken, 1/2 of the chopped cilantro, 1/2 of the diced onion, garlic, squeeze 1/2 lime and salt and pepper into the Ziploc bag. Place in the refrigerator for at least 1 hour or up to 8 hours to allow to marinate.
Once the chicken has marinated, remove them from the bag and drizzle some olive oil into a pan, set on medium heat and grill them on each side until the chicken is cooked throughly to temp (165º F).
In a bowl, add the diced avocado, diced tomatoes, the other half of the diced onions, the rest of cilantro, 1/2 squeezed lime and salt and pepper.
Mix gently and place on top of the cooked chicken breast.
Serve and enjoy!
