What You Need to Make Pumpkin Pie Bars
- All-purpose flour
- Powdered sugar
- Salted butter, softened
- Pumpkin puree – Not pumpkin filling
- Evaporated milk
- Brown sugar

- Salt
- Eggs
- Whipped cream (optional)

Pumpkin Pie Bars
Ingredients
- 1 cup all purpose flour
- ⅓ cup powdered sugar
- ½ cup salted butter softened
- 15 oz. pumpkin puree
- 12 oz. evaporated milk
- ¾ cup brown sugar
- 1 tsp. pumpkin pie spice
- ½ tsp. salt
- 2 large eggs
- Optional whipped cream for topping
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 baking dish with parchment, and set aside.
- For the crust, use a fork to combine the all purpose flour, powdered sugar, and softened butter. The ingredients should all be well incorporated, but the mixture will be crumbly.
- Press this mixture into the parchment lined pan, and bake for 15 min.
- Allow the crust to cool.
- For the pie, add the eggs to a large mixing bowl and lightly beat the eggs.
- Add the pumpkin puree, evaporated milk, brown sugar, pumpkin pie spice, and salt.
- Whisk until well combined.
- Pour this mixture over the cooled crust.
- Bake the pumpkin pie bars for 50-55 minutes.
- Allow the bars to cool, and slice. Top with whipped cream, if desired.
- Serve and enjoy!
