What You Need to Make Pumpkin Pie Bars

  • Powdered sugar
  • Salted butter, softened
  • Pumpkin puree – Not pumpkin filling
  • Evaporated milk
  • Brown sugar
  • Pumpkin pie spice – You can make your own Homemade Pumpkin Spice
  • Salt
  • Eggs
  • Whipped cream (optional)

How to make pumpkin pie bars for Thanksgiving and Fall gatherings
Prep Time 15 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 25 minutes

Ingredients
  

  • 1 cup all purpose flour
  • cup powdered sugar
  • ½ cup salted butter softened
  • 15 oz. pumpkin puree
  • 12 oz. evaporated milk
  • ¾ cup brown sugar
  • 1 tsp. pumpkin pie spice
  • ½ tsp. salt
  • 2 large eggs
  • Optional whipped cream for topping

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 baking dish with parchment, and set aside.
  • For the crust, use a fork to combine the all purpose flour, powdered sugar, and softened butter. The ingredients should all be well incorporated, but the mixture will be crumbly.
  • Press this mixture into the parchment lined pan, and bake for 15 min.
  • Allow the crust to cool.
  • For the pie, add the eggs to a large mixing bowl and lightly beat the eggs.
  • Add the pumpkin puree, evaporated milk, brown sugar, pumpkin pie spice, and salt.
  • Whisk until well combined.
  • Pour this mixture over the cooled crust.
  • Bake the pumpkin pie bars for 50-55 minutes.
  • Allow the bars to cool, and slice. Top with whipped cream, if desired.
  • Serve and enjoy!
