Rainbow Cupcakes are a fun and colorful dessert to make. These are perfect for birthday parties, Pride Month celebrations and anytime you just want something sweet to brighten your day.

I am all about color. In fact, the more color, the better.

That is why I love rainbow desserts. They are fun to make and just bring all the happy and cheerful vibes.

I’ve made desserts such as Rainbow Rice Krispies Treats, Funfetti Ice Cream Bread, Funfetti Cream Cheese Mints, Funfetti Cake Batter Popsicles and so many more!

These Rainbow Cupcakes are perfect to make for any pride month celebration, birthday party, St. Patrick’s Day or really, any time you just want to add something tasty and colorful to your life.

How to Make Rainbow Cupcakes

Ingredients:

For The Cupcakes:

For The Frosting:

Equipment Needed:

  • 12 count cupcake pan
  • Baking cups
  • Stand mixer
  • 6 bowls
  • 6 plastic spoons
  • Piping bag

Directions:

Make cake mix according to instructions on the box.

Evenly split the batter into 6 bowls and use the gel food coloring to make the following colors: Red, Orange, Yellow, Green, Blue & Purple

Add a teaspoon of each color to the baking cups. Do not swirl them.

Bake for 13-15 mins or until a toothpick comes out clean

Let cool completely before frosting.

Once the cupcakes have cooled, make the frosting by combining all of the ingredients into a large bowl and beating until it forms soft peaks.

The frosting should be slightly stiff but not hurt the hands when squeezing a piping bag

Cut off the tip of the piping bag and pipe dots (clouds) on top of the cupcakes and then immediately add the candy rainbow (cut down to an appropriate size)

You should be able to get 2-3 rainbows from one strip.

Notes:

  • If your rainbows won’t stand up the strip is too long and needs to be trimmed
  • If the strip is the perfect size you may need to just add a little bit of frosting to the outside of the rainbow to make it stand.

  • 1 Box White or Vanilla Cake Mix (I like Duncan Hines)
  • 1 Box Instant Vanilla Pudding Mix
  • 1 Cup Water
  • 3 Large Eggs
  • 1/3 Cup Vegetable Oil
  • Gel food coloring in rainbow colors

For The Frosting

  • 3/4 cup unsalted butter
  • 1/4 cup heavy whipping cream or milk
  • 3-4 cups confectioners’ sugar
  • 1 tsp vanilla extract
  • Airhead rainbow candy or Rainbow strip Candy
