Red Velvet Cupcakes with Amaretto Vodka Frosting

Have you ever heard about getting drunk by eating a cupcake? No? Well it can totally happen! Of course, you have to know what you are doing so you don’t bake out all that delicious goodness (alchol). So if you are feeling ready to indulge a little and maybe get a bit tipsy, give these Red Velvet Cupcakes with Amaretto Vodka Frosting a try!

What You Will Need to Make Red Velvet Cupcakes with Amaretto Vodka Frosting:

  • Duncan Hines Red Velvet Cake Mix (to make the cupcakes)
  • 1 8 oz. package of Cream Cheese, room temperature
  • ½ Cup of Butter (1 stick), room temperature
  • 3 Cups of Powdered Sugar (add more to reach consistency you want)
  • 1 Teaspoon of Pure Vanilla Extract
  • 1.5 oz (a shot glass size) of Pinnacle Amaretto Vodka
  • 1 Teaspoon of Cocoa Powder (optional)

How to Make Red Velvet Cupcakes with Amaretto Vodka Frosting:

  1. Prepare and bake the Red Velvet Cupcakes according to the instructions on the box then allow to cool in baking pan for 10 minutes prior to frosting.
  2. Combine the cream cheese, butter, powdered sugar, vanilla extract, and amaretto vodka into a bowl. Mix well until you reach a nice, thick consistency.
  3. If you want little bits of cocoa in the frosting, add it now and gently fold into the frosting (do not mix with a mixer or it will turn your frosting brown).
  4. Once the cupcakes are cool to the touch you can frost your cupcakes using a frosting tip and frosting bag. I used a large star tip to frost.
  5. Keep these away from kids and enjoy your adult boozy cupcakes!

When you combine the goodness of the cream cheese frosting with the taste of the Amaretto Vodka it gives it a nice chocolaty-vanilla flavor. Keep in mind these are alcoholic since you do not cook out the alcohol from the vodka so these are not kid-friendly but very adult-friendly. 😉
