Reese’s Pieces Cupcakes with Chocolate Peanut Butter Ganache

Halloween is nearing, and that is the perfect excuse to make all things sweet! But don’t go anywhere just yet! give these Reese’s Pieces Cupcakes with Chocolate Peanut Butter Ganache a try!

Now, I know there are a lot of peanut allergies on there these days (including my youngest son). So, instead of using Reese’s Pieces you can use regular M&M’s and swap out the peanut butter for sunflower butter. 

Reese’s Pieces Cupcakes with Chocolate Peanut Butter Ganache

Cupcake Ingredients:

  • 1 box white cake mix
  • ¾ cup plain Greek yogurt (can substitute sour cream)
  • 3 eggs
  • ½ cup milk
  • 1/3 cup oil
  • 2 teaspoons vanilla extract
  • 1 cup Reese’s pieces + extra for decoration

Peanut Butter Frosting Ingredients:

  • ½ cup butter, softened
  • 3/4 cup smooth peanut butter
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 2-3 cups powdered sugar

Chocolate Peanut Butter Chocolate Ganache Ingredients:

  • ½ cup smooth peanut butter
  • ¼ cup chocolate chips

How to Make Reese’s Pieces Cupcakes with Chocolate Peanut Butter Ganache:

How to Make the Cupcakes:

  1. Preheat oven to 350 degrees F. Line muffin tin with 24 cupcake liners and set aside.
  2. In a large bowl, add cake mix, eggs, oil, milk, plain Greek yogurt and vanilla extract and stir to combine. Add 1 cup Reese’s Pieces and mix to incorporate into the batter.
  3. Fill each cupcake liner ¾ full with prepared cake mix. Bake for 15-20 minutes (or until inserted toothpick comes out clean), then set aside to cool completely.

How to Make The Peanut Butter Frosting:

  1. Place peanut butter and softened butter in a mixing bowl and beat until smooth.
  2. Add milk, vanilla extract and 1 cup of powdered sugar to start.
  3. Beat until smooth and continue adding addition powdered sugar until the consistency and taste is as desired. You may need to adjust the amounts of peanut butter and/or milk depending on the thickness of the frosting and your preference. It should be a thick consistency, but still smooth enough to pipe onto a cupcake. Frost cupcakes and set aside.

Prepare the Chocolate Peanut Butter Ganache:

  1. Simply add chocolate chips and peanut butter to a small bowl. Microwave for 15 seconds, stir and repeat this process until ingredients are completely melted and combined.
  2. Drizzle Chocolate Peanut Butter Ganache over the tops of frosted cupcakes and immediately garnish with several Reese’s Pieces on top.

Zombie Eyeball Cupcakes

This time of the year has me thinking of zombies, witches, goals, and creepy crawlers. Of course that means I am busy crafting and baking away with my boys to celebrate the season. Our latest creation was these Zombie Eyeball Cupcakes. They look disgusting but they are totally edible, including the eyeball!

These cupcakes are extremely easy to make. So easy in fact, your little one’s will be able to help! Did I mention that the cupcakes are also entirely homemade? YUM! Hope you enjoy making them as much as we did!

Supplies Needed to Make Zombie Eyeball Cupcakes:

For Cupcakes:

  • 1 2/3 cup flour
  • 1 cup sugar
    1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 cup unsalted butter, room temperature
  • 3 egg whites, room temp
  • 3 teaspoon vanilla
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • Cupcake liners
  • Piping Bag and Piping Tips (I used a large rounded tip with a large opening)

For Frosting:

  • 1/2  cup unsalted butter, room temp
  • 2 cup powdered sugar
  • 3 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • Red food gel
  • Gummy eye ball candy (found in Halloween section)

How to Make Zombie Eyeball Cupcakes:

  1. Preheat oven to 350 degrees. Line cupcake tins with paper liners.
  2. Add flour, sugar, baking soda and baking powder together in a mixing bowl.
  3. Whisk ingredients.
  4. Mix the wet ingredients together on medium speed until mixed.
  5. Add to the dry ingredients, the butter, egg whites, vanilla, sour cream and milk. Mix on medium speed mixing only until just blended.
  6. Fill cupcake liners a little more than 3/4’s way.
  7. Bake at 350 degrees for 20-25 minutes.
  8. Allow to cool in the cupcake pan for 10 minutes.
  9. Remove to cooling rack to finish cooling about 30 minutes.

  11. Add red gel on top of the white frosting, the messier the better. You can even allow it to drip down the sides of the frosting.zombie eyeball cupcakes inprocess2
  12. Place an eyeball on the top.
  13. Serve and enjoy!
