Thanksgiving Potato Skins are a great way to eat Thanksgiving leftovers—crispy potato shells loaded with turkey, stuffing, cheese, and a drizzle of cranberry sauce. These handheld bites are perfect for transforming leftovers into a whole new flavor experience!

If you are like us and end up with way too many Thanksgiving leftovers, this recipe is one to keep in mind. While I enjoy heating up Thanksgiving leftovers, after a day or two, I get sick of the same old meal. This recipe takes those leftovers and turns them into an entirely new meal. These are easy to make, don’t take much time to throw together and best of all, don’t allow your Thanksgiving leftovers to go to waste!

Ingredient Information

  • Potatoes: Russet potatoes work great for this recipe due to their size. You can also use Yukon Gold potatoes.
  • Turkey: Use leftover turkey meat for this recipe. You can also finely shred or cut the turkey into smaller pieces before using.
  • Cranberry Sauce: You can use homemade cranberry sauce or canned.
  • White Cheddar Cheese: You can also use mild or sharp cheddar cheese or even fiesta blend.

Storage & Reheating Information

Refrigerate leftovers in an airtight container, separating layers with parchment or wax paper to avoid sticking. Store them in the refrigerator for up to 3 days.

Reheat in the oven at 350°F (175°C) for 10-15 minutes to bring back the crispiness. You can also use an air fryer at a lower temperature (around 325°F) for a few minutes.

Ingredients
 

  • 6 baking potatoes baked
  • salt and pepper to taste
  • 1 ½ cups mashed potatoes leftovers or potatoes from the baked potatoes
  • 1 ½ cups turkey leftovers
  • 1 ½ cups stuffing leftovers
  • ½ cup white cheddar cheese shredded
  • ½ cup cranberry sauce
  • scallions

Instructions
 

  • Preheat oven to 400 degrees.
  • Cut each potato in half lengthwise.
  • Scoop out the inside of the potato but leave a little so it’s stable.
  • Place the potato skins on a baking tray.
  • Sprinkle the potatoes with salt and pepper.
  • In a large mixing bowl combine the mashed potatoes, stuffing and turkey.
  • Spoon the turkey mixture evenly into the 6 skins.
  • Sprinkle with the cheese.
  • Bake for 15 minutes or until golden brown.
  • Top with the cranberry sauce.
  • Sprinkle with the scallions.
  • Serve!
