Turkey Bacon Ranch Cucumber Sandwiches

I’ll be the first to admit that I love bread (I blame the Italian in me) but bread isn’t always the most “diet-friendly”. So want to know my secret for staying on track? I use cucumbers to replace the bread! Yes, cucumbers! Today was a day where I actually made Turkey Bacon Ranch Cucumber Sandwiches and they turned out so good, I just had to share them with you!
What You Will Need to Make Turkey Bacon Ranch Cucumber Sandwiches:
- Sliced Turkey (I used Oscar Mayer Selects Natural Applewood Smoked Turkey Breast)
- Cooked Turkey Bacon (I used one full piece, cut in half for each sandwich)
- Ranch Dressing
- Mozzarella Cheese, Sliced
- 2 Full Cucumbers, Peeled and Sliced Vertically
- Wood Toothpicks
How to Make Turkey Bacon Ranch Cucumber Sandwiches:
You are going to start by washing and peeling your cucumbers.
Cut the ends off and then cut your cucumbers in half horizontally then in half again vertically. You will end up with 4 nice long pieces enough to make 2 sandwiches.
Next, you will want to cook your bacon and allow it to cool. Cut the bacon and cheese in half so you have enough to place on both sandwiches.
The last step is to assemble the sandwiches. I smeared a bit of ranch on the top half of the cucumber then added my turkey, cheese, and bacon. To hold it all together I added 2 wooden toothpicks.
It’s truly that easy! And it’s totally delicious. I bet it will become a household favorite in no time!
