When it comes to satisfying my sweet tooth, whipping up a quick dessert is all I need.

Waffle ice cream sandwiches (also known as waffle cookies) take your love for waffles and ice cream and make a one-of-a-kind treat that nothing can beat.

The beauty of this recipe is, you can make it for so many different occasions. While we made ours using patriotic sprinkles for 4th of July, Memorial Day or any patriotic holiday, you can change up the ice cream flavors and sprinkles to make it for any celebration.

Grab a few different pints of ice cream, some different sprinkles and toppings, and you have yourself an easy fun dessert the whole family will enjoy.

What You Need to Make Waffle Ice Cream Sandwiches

For The Waffles:

  • Eggs – beaten
  • Sugar
  • Milk
  • Oil – I prefer olive oil
  • Flour
  • Baking Powder
  • Salt

How many waffle sandwiches does this recipe make?

If you follow our recipe, this recipe will make 12-14 waffle ice cream sandwiches.

Can I use waffle mix instead?

Absolutely! If you’d prefer, you can use pre-made waffle mix instead of using the homemade waffle mix recipe.

What other toppings can I use?

Aside from sprinkles, you can use a variety of toppings including chocolate chips, crushed candy such as chopped reese’s peanut butter cups, caramel sauce, and even chocolate sauce.

Can I use other flavors of waffle batter?

Absolutely! You can make your waffle batter flavored or even use brownie batter and make brownie waffles instead. The possibilities on flavor combinations are endless!

How Far in Advance Can I Make These?

I would make these right before you are ready to serve as the ice cream will melt if made too far ahead. I also prefer my waffles fresh as frozen waffles make it hard to eat.

How to Make Waffle Ice Cream Sandwiches

Heat up your waffle maker and brush with melted butter (you can also use nonstick cooking spray). 

In a large bowl, break the eggs and beat them with a whisk until light and fluffy, and a light lemon yellow color. 

Add the sugar, and milk, and mix well. 

Add the oil, and stir. 

Add the flour, baking powder, and salt, and stir well.  Batter may be a little lumpy, but that’s normal.  Stir until only a few lumps are left, and batter is smooth. 

Using a 1/2 cup measuring cup, pour waffle mix into the center of the hot waffle maker, and close the lid.  Follow instructions for your waffle maker, and watch waffles to prevent burning. 

Remove from waffle maker, and repeat until all batter is used.

Break the waffles into 4ths, or quarters, at the creases, and pair them in two’s. 

Using an ice cream scoop, get a large scoop of ice cream and place it on one of the quarters.

Place the second waffle quarter on top of the ice cream, and gently press down to spread out the ice cream between the two waffle quarters, making the ice cream sandwich.

Smooth the edges evenly and roll the ice cream waffle sandwich edges in the sprinkles.

Continue until all the Waffles have been made into sandwiches and rolled in sprinkles.

Serve immediately and Enjoy!
