Gingerbread Cookie Bars

Gingerbread Cookie Bars are a soft and chewy holiday treat that are so much easier to make than Gingerbread Cookies. They are topped with cream cheese frosting for an extra bit of sweetness!

For The Gingerbread Cookie Bars 2 cups + 2 tablespoons flour 1 ½ teaspoon ground cinnamon 1 teaspoon ground ginger ¼ teaspoon ground nutmeg ¼ teaspoon ground cloves 1 teaspoon baking soda ½ teaspoon kosher salt ¾ cup unsalted sweet cream butter softened 1 cup light brown sugar packed ¼ cup molasses 1 large egg 2 teaspoon pure vanilla extract For The Cream Cheese Frosting ½ cup unsalted sweet cream butter softened 1- 8 oz cream cheese softened 2 cups powder sugar 1 teaspoon vanilla extract 1 teaspoon cinnamon
For The Gingerbread Cookie Bars: Preheat the oven to 350 and tear off a large sheet of parchment paper that is long enough to come up the sides about 2-4 inches of your baking pan.
In a large mixing bowl, combine the flour, ginger, cinnamon, nutmeg, cloves, ground ginger, baking soda and salt and whisk together until combined
In a stand mixer, cream together the brown sugar, butter and molasses and mix until well combined.
Mix in the egg and vanilla.
Gradually mix in the dry ingredients until well combined.
Scoop batter into the pan and lightly press down with your hands until evenly flattened.
Bake for about 18 minutes
Place baking dish onto a wire rack and let cool completely.
Once cooled, prepare the cream cheese frosting.
For The Cream Cheese Frosting: Using a stand mixer, combine all ingredients except the sprinkles and icing transfer and mix until smooth and fluffy
Scoop the frosting into the piping bag
Pipe dollops of the frosting on the top of the cookie bars
Sprinkle some gold and chocolate sprinkles all over the bars
Place the gingerbread man sprinkles randomly onto the frosting
Cut bars then serve enjoy!
