Homemade Raspberry Butter

This Homemade Raspberry Butter is made with fresh raspberries and creamy butter, this unique recipe is perfect for adding a burst of fruity goodness to your morning toast, scones, or biscuits.

Ingredients
  

  • 1 cup of softened salted butter
  • ¾ cup of fresh or frozen raspberries you can also use raspberry jam if you'd like
  • ½ cup of confectioners sugar

Instructions
 

  • Start by softening your butter and allowing your raspberries to get to room temperature. If you are using frozen raspberries, make sure the raspberries are thawed before using. My raspberries were still a little frozen and it caused the butter to freeze a little as I made it making it a bit chunky. Once the butter melted a little, it was very creamy.
  • Place the softened butter in a medium bowl and mash with a spoon until creamy. You can also use your stand mixer to whip the butter if you'd prefer.
  • Add in the raspberries (or raspberry jam) into the bowl and mix together until everything is well combined.   
  • Add confectioners sugar and whip for a couple minutes.
  • Transfer mixture into an airtight container or jar. Top with fresh berries and a sprig of mint.
  • When ready, spread your freshly made raspberry butter and enjoy!
