Red Velvet Cupakes with Amaretto Vodka Cream Cheese Frosting

Ingredients
  

  • Duncan Hines Red Velvet Cake Mix to make the cupcakes
  • 1 8 oz. package of Cream Cheese room temperature
  • ½ Cup of Butter 1 stick, room temperature
  • 3 Cups of Powdered Sugar add more to reach consistency you want
  • 1 Teaspoon of Pure Vanilla Extract
  • 1.5 oz a shot glass size of Pinnacle Amaretto Vodka
  • 1 Teaspoon of Cocoa Powder optional

Instructions
 

  • Prepare and bake the Red Velvet Cupcakes according to the instructions on the box then allow to cool in baking pan for 10 minutes prior to frosting.
  • Combine the cream cheese, butter, powdered sugar, vanilla extract, and amaretto vodka into a bowl. Mix well until you reach a nice, thick consistency.
  • If you want little bits of cocoa in the frosting, add it now and gently fold into the frosting (do not mix with a mixer or it will turn your frosting brown).
  • Once the cupcakes are cool to the touch you can frost your cupcakes using a frosting tip and frosting bag. I used a large star tip to frost.
  • Keep these away from kids and enjoy your adult boozy cupcakes!
