Multi-Grain Blackberry Waffles with Yogurt

Ingredients
  

  • 2 cups Multigrain Waffle Mix I used the Trader Joe's brand
  • ½ cup whole milk
  • ½ cup buttermilk
  • 2 eggs
  • 2 tablespoons extra virgin olive oil
  • Non-stick cooking spray
  • Toppings:
  • Greek Yogurt
  • Blackberry Jam

Instructions
 

  • Start by preheating the waffle iron.
  • Next, using a large bowl, add multigrain waffle mix, whole milk, buttermilk, eggs, and the extra virgin olive oil. Now combine ingredients using a wire whisk or fork.
  • Let waffle mix stand at room temperature for 10 minutes. This just allows it to set the the mixture to become a thicker batter.
  • Now, spray waffle iron with non-stick cooking spray and add three (3) tablespoons into each waffle square, add a whole single blackberry into the center of the waffle batter.
  • Close the lid on the waffle maker and cook until the waffles are golden brown. I usually use a fork to remove the waffles so you don't burn your hands.
  • Now place two waffles on a serving plate and top with yogurt and blackberry jam. It's oh so good so be prepared to go back for seconds!
