Pumpkin Spice Twinkies are the perfect homemade dessert for Fall. With spiced cake mix, fresh pumpkin puree, and a marshmallow creme filling, you simply cannot go wrong!
Prepare the spice cake mix (just mix the box of cake mix and can of pumpkin puree) and portion out batter into the twinkie pan, filling each about 2/3 of the way full.
Bake for 15-18 minutes, until an inserted toothpick comes out clean.
Let cool completely.
Meanwhile, prepare the filling by beating together all marshmallow filling ingredients including the marshmallow cream, shortening, salt, powdered sugar and vanilla extract. If it’s too stiff, add a teaspoon or two of hot water.
Scoop the filling into a piping bag and snip a tiny amount off the end.
Using a chopstick, make three holes in the bottom of each twinkie. Try to move the end of the chopstick around a bit to make a bigger cavity for the filling.
Pipe the marshmallow filling into each of the three holes of each twinkie.
Serve and enjoy!
