Crumbl is the latest craze in the cookie world and with good reason. These Copycat Crumbl Birthday Cake Cookies taste like the ones straight from the Crumbl shop. They are easy to make so you can enjoy these giant bakery cookies at home!

Ingredients
  

For The Crumbl Birthday Cake Cookie Dough

  • 1 ½ cups unsalted sweet cream butter softened
  • 1 ½ cups sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 4 ½ cups flour
  • 3 teaspoons baking powder
  • ¾ cups rainbow Funfetti sprinkles

For The Vanilla frosting

  • 1 cup unsalted sweet cream butter softened
  • 3 cups powdered sugar
  • 1 teaspoons pure vanilla extract
  • 4 Tablespoons heavy whipping cream
  • 1 large piping bag with large round tip
  • ½ cup rainbow Funfetti sprinkles

Instructions
 

  • How to Make the Crumbl Birthday Cake Cookies
  • Preheat oven to 350 degrees and line two cookie sheets with parchment paper
  • Using a standing mixer, beat the butter, sugar, eggs, and vanilla (or cake batter flavoring) until combined, creamy and fluffy
  • Using a medium bowl, whisk the flour and baking powder
  • Gradually beat in the dry ingredients into the wet until a soft dough forms
  • Gently fold in the Funfetti sprinkles
  • Using a medium ice cream scooper, scoop out some dough and roll into a ball. If you have a food scale on hand, you can weigh the cookies to 2.5 ounces so you know they will all be the same size and bake evenly.
  • Place the cookies onto a cookie sheet and lightly flatten into a thick disk (you can use the bottom of a cup or small bowl to help with this)
  • Bake in the oven for 12-15 minutes or until lightly brown
  • Remove from oven and allow to cool.

  • How to Make the Vanilla Frosting
  • Using the standing mixer, beat all ingredients, except the sprinkles, together until combined and smooth and holds a peak
  • Scoop the frosting into the piping bag
  • Starting from the middle of the cookie, pipe a thick spiral of frosting from the middle to the edge of the cookie
  • Sprinkle some Funfetti sprinkles on top
  • Allow the frosting to harden before enjoying!
  • Serve and Enjoy!
