Waffle Ice Cream Sandwiches

Waffle Ice Cream Sandwiches take homemade ice cream sandwiches to the next level. They are easy to make and perfect to serve up on a hot summer day.

Ingredients
  

For The Waffles:

  • 2 Eggs - beaten
  • ¼ cup of Sugar
  • 2 ¼ cups of Milk
  • ¾ cup of Oil
  • 2 ½ cups of Flour
  • 2 Tablespoons of Baking Powder
  • ½ teaspoon of Salt

For The Filling

  • Vanilla Ice Cream
  • Patriotic Sprinkles

Instructions
 

  • Heat up your waffle maker and brush with melted butter (you can also use nonstick cooking spray). 
  • In a large bowl, break the eggs and beat them with a whisk until light and fluffy, and a light lemon yellow color. 
  • Add the sugar, and milk, and mix well. 
  • Add the oil, and stir. 
  • Add the flour, baking powder, and salt, and stir well.  Batter may be a little lumpy, but that's normal.  Stir until only a few lumps are left, and batter is smooth. 
  • Using a 1/2 cup measuring cup, pour waffle mix into the center of the hot waffle maker, and close the lid.  Follow instructions for your waffle maker, and watch waffles to prevent burning. 
  • Remove from waffle maker, and repeat until all batter is used.
  • Break the waffles into 4ths, or quarters, at the creases, and pair them in two's. 
  • Using an ice cream scoop, get a large scoop of ice cream and place it on one of the quarters. 
  • Place the second waffle quarter on top of the ice cream, and gently press down to spread out the ice cream between the two waffle quarters, making the ice cream sandwich. 
  • Smooth the edges evenly and roll the ice cream waffle sandwich edges in the sprinkles. 
  • Continue until all the Waffles have been made into sandwiches and rolled in sprinkles.
  • Serve immediately and Enjoy!
