For The Chipotle Sauce
½cupsour cream
2Tablespoonsmayonnaise
1chipotle in adobo sauce
1teaspoonfreshly squeezed lime juice
¼teaspoongarlic powder
Instructions
Cook the beef over medium-high heat until no longer pink. Stir in the water and add the taco seasoning.
Wrap the tortillas in a damp paper towel and microwave for 20 seconds.
Reserve 1 cup of cheese to grill on the burritos.
Lay out a tortilla and fill it with a few spoons of beef, cheese, rice, nacho cheese, a spread of chipotle sauce, fiesta strips, and sour cream. Continue filling the remaining burritos.
Fold the sides in, then start at one end and roll up.
Spread a ¼ cup of the cheese down the middle of a hot pan. When the cheese begins to melt, place a burrito on the cheese and grill the burrito until the cheese is slightly browned. Gently lift from the pan.
