Taco Bell Grilled Cheese Burrito

How to make a copycat Taco Bell Grilled Cheese Burrito at home for the entire family for a fraction of the cost.

Ingredients
  

  • 1 pound ground beef
  • ¼ cup water
  • 1 ounce packet taco seasoning
  • 4 large burrito tortillas
  • 2 cups Mexican cheese blend divided
  • 1 cup Mexican rice your own recipe or a bag of premade rice
  • 1 cup nacho cheese
  • 1 Chipotle sauce below
  • 1 cup Fiesta strips
  • ½ cup sour cream

For The Chipotle Sauce

  • ½ cup sour cream
  • 2 Tablespoons mayonnaise
  • 1 chipotle in adobo sauce
  • 1 teaspoon freshly squeezed lime juice
  • ¼ teaspoon garlic powder

Instructions
 

  • Cook the beef over medium-high heat until no longer pink.  Stir in the water and add the taco seasoning.
  • Wrap the tortillas in a damp paper towel and microwave for 20 seconds.
  • Reserve 1 cup of cheese to grill on the burritos.
  • Lay out a tortilla and fill it with a few spoons of beef, cheese, rice, nacho cheese, a spread of chipotle sauce, fiesta strips, and sour cream.  Continue filling the remaining burritos.
  • Fold the sides in, then start at one end and roll up.
  • Spread a ¼  cup of the cheese down the middle of a hot pan. When the cheese begins to melt, place a burrito on the cheese and grill the burrito until the cheese is slightly browned.  Gently lift from the pan.
  • Continue with the remaining burritos.
  • Serve and enjoy!
