Grinch Brownies

Move over boring chocolate brownies, Grinch Brownies are the only appropriate Grinch dessert to serve up for the holidays! They are easy to make and so sweet, you’ll go back for seconds!

Grinch Brownies

You simply cannot celebrate the holidays without some Grinch desserts and trust me, I am sort of a pro at the Grinch themed recipes.

I absolutely adore The Grinch and while there are so many delicious Grinch treats to choose from, I have to say, these Grinch Brownies land near the top of my list.

These Grinch Brownies are moist and made with cake mix for a one-of-a-kind treat.

PRO TIP:

Use Gel Food Coloring instead of regular food coloring. The Gel food coloring gives you a better, vibrant green color and seems to mix better with the cake mix. Regular food coloring tends to water down the cake mix and can result in a gooey consistency. I like to use the lime green or leaf green gel food coloring for my Grinch recipes.

How to Make Grinch Brownies

In the mixing bowl of a stand mixer, add the Cake Mix, Eggs, Powdered Sugar, Oil, and Water, and mix on low speed until combined.  Scrape down the sides of the mixing bowl, and mix at high speed for 1 minute.

Next, add the Lime Green Food Coloring a few drops at a time until the desired color is achieved.  Remove the mixing bowl from the stand, and gently fold in the White Chocolate Chips.

Line the bottom of a 9 X 9 inch dish with Parchment paper, and pour the batter into the dish.

Bake at 350 degrees for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.  Remove from oven to a wire rack to cool completely. 

While the Brownies are cooling, make the Frosting.

In the mixing bowl of a stand mixer, add the Butter, Milk, and Vanilla, and blend at low speed until mixed.  Add the Powdered Sugar a little at a time until all is added, and well blended, smooth and creamy. 

Add a few drops of the Lime Green Food Coloring until desired color is reached. 

When the Brownies are cool, Frost with the Frosting, and sprinkle with the Red Hearts.

This recipe makes 10 to 12 Brownies depending on the size you cut them.

Ingredients
  

For The Brownies:

  • 2 Eggs
  • 1 cup of Powdered Sugar
  • 1 White Cake Mix
  • cup Vegetable Oil
  • 2 Tablespoons Water
  • 1 cup of White Chocolate Chips mixed in
  • Lime Green Food Coloring Gel

For The Frosting:

  • 1 ½ cups of Powdered Sugar
  • 3 Tablespoons of Butter – softened
  • ½ teaspoon of Vanilla
  • 1 – 2 Tablespoons of Milk
  • Lime Green Food Coloring Gel
  • Red Heart Sprinkles
