This Hawaiian Mimosa will take you right to the beaches of Hawaii with every sip. Made with champagne, coconut rum, pineapple juice and grenadine, this tropical cocktail is easy to make!
Hawaiian Mimosas Are Tropical Drinks
If you’ve ever been to Hawaii, you know that the sunrises and sunsets are mesmerizing and colorful.
That was exactly the inspiration behind this Hawaiian Mimosa. It’s sweet, colorful and tastes like a tropical vacation in a glass.
This is the perfect summer cocktail and is great to serve up at your next party but would also be great for brunch!

What You Need to Make A Hawaiian Mimosa
- Prosecco or Champagne – Use your favorite kind. I used Ruffino Prosecco Sparkling Wine
- Pineapple Juice – I prefer the 100% pineapple juice but you can use a mixture if you’d like.
- Coconut Rum– I like Malibu Caribbean Rum but you can use any brand/kind you’d like.
- Grenadine
You will also need champagne flutes.
Helpful Tips
- I would make these right before serving since the champagne can go flat.
- For the same reason above, the Champagne doesn’t stay bubbly so I wouldn’t keep leftovers.
- You can make a large batch of the orange colored mixture and pour into glasses then top with grenadine when ready to serve.
Hawaiian Mimosa
Ingredients
- 4 ounces prosecco or champagne
- 1 ½ ounce coconut rum
- 2 ounces pineapple juice
- Grenadine
Instructions
- To a champagne flute, add pineapple juice, coconut rum, and prosecco.
- Finish with a slow poured splash of grenadine (can pour over back of spoon to get that layered look).
- Serve and Enjoy!
