Watermelon Popsicles

These Homemade Watermelon Popsicles are the perfect frozen treat to make on a hot summer day.

On a hot day, nothing makes a more perfect way to cool down than a delicious frozen treat.

While you could totally buy yourself a box of watermelon ice pops from the grocery store, I dare you to make these easy watermelon popsicles instead.

Aside from being adorable to display and look at, they are a healthier alternative to those commercially made popsicles that are loaded with added sugar and artificial ingredients. Ditch the processed junk and make these healthy popsicles at home.

All you need is popsicle molds, a popsicle stick and a few simple ingredients to make your own delicious watermelon popsicles the whole family will love!

Healthy Watermelon Popsicles

Ingredients:

  • Seedless watermelon – For this, you will want a fresh watermelon cut into cubes
  • Coconut milk – Feel free to use your favorite coconut milk
  • Lemon Juice – You can use freshly squeezed or lemon juice in a bottle
  • Kiwi – Fresh kiwi is best
  • Chocolate chips – I like the Ghirardelli mini chocolate chips
  • Stevia – You can also use regular cane sugar if you prefer
  • Silicone Popsicle Mold

Directions:

Start by squeezing a lemon to extract the lemon juice.

In a blender or food processor, add the watermelon (remember to take out the seeds), 2 teaspoons of stevia and lemon juice. Blend until well pureed.

Carefully pour the puree into the popsicle molds filling each about 2/3 full. Then add some chocolate chips to each mold and with the help of a teaspoon or a popsicle stick gently push down to immerse the chips.

Place the lid on and insert the popsicle sticks. Freeze for 2-3 hours, until firm.

In the meantime prepare the kiwi layer, whisk together coconut milk with 1 teaspoon of stevia.

Remove the popsicles from the freezer, and pour around 20 ml of coconut milk into each layer. Clean the sides if necessary. Return to freezer for about 1 hour.

Prepare the last layer by blending the kiwi, without the skin into a blender. Mix until well pureed.

Remove the popsicles from the freezer, and pour the kiwi mix into each layer. Return to freezer for about 1 hour.

Remove the popsicles from the popsicle mold by running a little warm water over the outside of the mold for about 20 seconds. Gently pull the popsicle sticks out and your Watermelon Popsicles are ready to serve.

Things to Note:

  • You can keep the popsicles in the freezer for a couple of weeks.
  • If you’d rather, you can use organic fruit juice or store-bought watermelon juice in place of the watermelon puree
  • You can change up the flavor by adding any fresh fruit you’d like such as fresh strawberries to make strawberry watermelon popsicles.
