Homemade Double Chocolate Cookies

I love chocolate so much that I could eat it all day but I am pretty sure my thighs wouldn’t thank me. So instead, I indulge in chocolate every now and again. Recently I made some Homemade Double Chocolate Cookies and they certainly hit the spot! So I thought I’d share them with you today!

While I certainly think these are quite chocolatey, you can add some chocolate chips to it if you like to turn them into triple chocolate cookies! YUM!

The secret behind making gooey cookies is removing them from the oven before they are entirely done cooking. Allow them to sit on the hot cookie pan and cool to room temperature. It will leave the insides nice and gooey!

Ingredients Needed to Make Homemade Double Chocolate Cookies:

  • 8 ounces Bittersweet Chocolate (4 ounces melted, 4 ounces chopped)
  • 1 1/2 cups Flour (you can also use almond flour if you want)
  • 1/2 cup Unsweetened Natural Cocoa
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 1 cup Coconut Sugar
  • 2 large Eggs
  • 1 stick Butter, cubed
  • 1 teaspoon Pure Vanilla Extract

How to Make Homemade Double Chocolate Cookies:

  1. Preheat oven to 350 degrees.
  2. Melt half of the chocolate in the microwave.
  3. In a large bowl combine flour, cocoa, baking powder, salt, and sugar. Whisk well.
  4. Add in cubed butter and mix until at a cornmeal consistency. Add in the eggs, vanilla, and melted chocolate. Stir until the dough is smooth. Then gently fold in the chopped chocolate.
  5. Drop dough onto baking sheet in balls. Bake cookies for 8-10 minutes (cookies will be soft when they are done, do not bake until hardened). double chocolate cookies inprocess1
  6. Set on a cooling rack until cookies firm.
  7. Serve and enjoy!
