Grinch Crepes

These Grinch Crepes make the cutest breakfast for Christmas. With a green crepe stuffed with a cream cheese filling and topped with a heart sprinkle, your appetite will surely grow three sizes!

Grinch Crepes

If you know me at all, you know that I adore The Grinch.

Every year we come up with new and fun Grinch treats, desserts and crafts to do as a family.

And to be honest, I am not sure why I didn’t think of making Grinch Crepes before now. After all, we eat crepes every weekend.

These Grinch Crepes truly are the perfect way to kick off the Holidays since they are so bright, colorful, and delicious.

But not to worry, we’ve now officially made Grinch Crepes and it will be a regular holiday breakfast for our family and I am sure it will be for you too.

How to Make Grinch Crepes

Ingredients:

For The Crepes:

For The Cream Cheese Filling:

This recipe does use a crepe maker but you can also use a frying pan or griddle instead.

Directions:

In a large bowl, whisk together the Eggs, Milk, Vanilla and Sugar, until light and smooth. 

Add the Flour, and whisk until any lumps disappear, or batter is smooth.

Next, add green food coloring (about 5-10 drops until you reach your desired shade of Grinch Green) and let batter sit for 20 minutes. Bubbles will form on the top, that’s normal. 

Turn Crepe Maker (or your sauce pan) on to the low setting, and when hot, add the Tablespoon of Butter, and melt on the non-stick surface. 

When Butter has melted, add 1/4 cup of the Crepe Batter, and spread the Batter out thin on the Crepe Maker – either using the Crepe Maker tools or the back of a spoon.  This will make the Crepe Batter thin. 

Cook the Crepe for about 3 minutes, then flip the Crepe, and cook for another minute on the other side.  Be careful not to burn or the crepes will turn brown instead of staying green.

Remove the Crepe with the Crepe tool to a plate, or a piece of Parchment paper, or Silpat.  Continue until all batter has been used.

Make the Filling:

In the mixing bowl of a stand Mixer, mix the Cream Cheese, and Heavy Whipping Cream, until smooth and creamy. 

Add the Sugar, Powdered Sugar, and Vanilla, and blend until smooth. 

Place the Filling in the refrigerator until time to fill the Crepes.

To Fill The Crepes:

With the Crepes laying flat, add about 2 Tablespoons of the filling to the center of the Crepe, and smooth out evenly. 

Fold the Crepe in half, and then in half again.

Place on a serving plate, stacking two or three Crepes on the plate. 

Add the Red hearts along the edges of the Crepes. 

Serve, and Enjoy!

  • 1 cup Flour
  • Pinch Salt
  • 2 Eggs
  • 1 tablespoon Sugar
  • 1 ½ cups Milk
  • 1 teaspoon Vanilla
  • 2 drops green gel food coloring
  • 1 tablespoon Butter – for the Crepe Maker

For The Filling

  • 2 packages Cream Cheese – softened 8 oz
  • ¼ Cup Heavy Whipping Cream
  • cup Sugar
  • ½ cup Powdered Sugar
  • ½ teaspoon Vanilla
  • Candy Hearts

Notes

You want to cook these low and slow to have them stay green!
